Cooking with kids: flat bread with meatballs

I have been busy lately, but last night I made this for dinner (again!)and thought I share it with you as it is so successful in our house.
Here is the recipe. It’s from Masterchef Austalia, very easy and very quick to make.

Skewered meatballs with rosemary flat bread and carrot salad
For the flat bread you will need:

1½ tablespoons extra virgin olive oil
½ cup warm water
250g plain flour
½ teaspoon salt
1 tablespoon finely chopped rosemary
Extra flour for dusting

 

2 tablespoons butter, melted
For the meatballs you will need:
2 teaspoons cumin seeds
2 teaspoons coriander seeds
1 teaspoons paprika
2 tablespoons roughly chopped parsley
2 tablespoons roughly chopped coriander
½ onion, chopped
500g beef mince
Zest of 1 lemon
6 rosemary sprigs, leaves removed
Extra olive oil for brushing
For the carrot salad you will need:
2 carrots, peeled and grated
2 tablespoons extra virgin olive oil
Juice of half a lemon
1 tablespoon chopped parsley
1 tablespoon chopped coriander leaves
2 tablespoons pistachios
2 tablespoons sultanas
2 drops rosewaterIf you haven’t got exactly the same ingredients, just substitute with something similar. I hardly ever have rosewater in my cupboard! I have tried this recipe with some left over chicken from roast dinner or steak. We always have Greek selection of dips in our fridge, so I serve them with the flat bread and meat. Any leftover (if there are any) can be taken for school packed lunches. My kids love that.If you haven’t heard of Masterchef, here is the link with more recipes.
